Scrambled Eggs with Smoked Salmon
Ingredients (4 Servings)
- 4 large eggs
- 4 large egg whites
- Fresh Ground Pepper to Taste
- 1 Teaspoon Canola Oil
- 2 thin sliced green tops Scallions
- 1 ounce thinly sliced Smoked Salmon
Method
- Blend the eggs, egg whites and pepper in a small bowl.
- Heat the oil in a non stick greasy pan at medium flame.
- Put the Scallion to deep fry on the pan and cook it until it gets softened. It will approximately require 30 seconds.
- Now pour the eggs into the pan and cook it till the time it begins to set on the pan, now stir the salmon.
- Keep on cooking till the time the eggs thickens and softens to become dreamy curds.

Low Fat Spinach and Mushroom Frittata
Ingredients
- 5-ounce pack baby spinach
- 1 Cup Sliced Cremini Mushrooms
- 1 Large Roma Tomato( Halved Lengthwise and then Sliced)
- 1 1/2 Cups Liquid Egg Substitute
- Fresh Ground Black Pepper
- 1/3 cup Reduced Fat Cheese
Preparation
- Grease a medium oven-proof nonstick pan with cooking spray.
- Now wilt spinach on low medium flame.
- Add the sliced mushrooms and tomatoes to the spinach pan and also cook it for two minutes.
- Add the egg substitute to the bowl and then cook it for 5 minutes until it edges are set.
