Chocolate Cake
Ingredients
- 2 cup Flour, unbleached & sifted
- 1/2 cup Baking Cocoa
- 2¼ tsp Baking Soda
- 3/4 tsp Salt
- 3/4 cup Vegetable Shortening
- 1/3 cup Sugar
- 1½ cup Dark Corn Syrup
- 3 Eggs, large
- 1½ tsp Vanilla Extract
- 1 cup Coffee, cooled
Instructions
- Preheat oven to 350 degrees F.
- Sift together flour, cocoa, baking soda and salt & set aside.
- Cream together the vegetable shortening and sugar in a mixing bowl, until light and fluffy.
- Blend in the corn syrup and egg yolks. Beat in the vanilla extract.
- Add dry ingredients, alternately with coffee, to creamed mixture, beating well after each addition.
- Beat egg whites in another bowl, until stiff peaks form.
- Now, fold the egg whites into cake batter.
- Pour the batter into a greased 13x9x 2-inch baking pan.
- Bake for about 45 minutes, or until cake seems done.
- Cool on a wire rack and serve.
Low Fat Carrot Cake
Ingredients
- 2 cup All-purpose Flour
- 2 tsp Cinnamon
- 1 tsp Baking powder
- 1 tsp Baking soda
- 3/4 tsp Salt
- 1/4 tsp Nutmeg
- 1 pinch Clove Powder
- 1½ cup Sugar
- 1 Pineapple, crushed (8 oz can)
- 3 tsp Vegetable oil
- 1 tsp Vanilla
- 3 cup Carrots, shredded
- 3 large Egg Whites
Instructions
- Preheat oven to 350 degrees F.
- Line 13x9"baking pan with foil and coat it with vegetable cooking spray.
- Combine flour, cinnamon, baking powder, baking soda, salt, nutmeg, and cloves in a bowl.
- Beat sugar, pineapple, oil and vanilla in a mixer bowl, until smooth. Beat in dry ingredients, until just combined. Stir in carrots.
- Beat egg whites in small mixer bowl, to form stiff peaks. Now, fold into the carrot mixture,in 2 batches, with rubber spatula.
- Pour the cake batter into pan.
- Bake for 40 minutes, or until a toothpick inserted in the center comes out clean.
- Cool the cake on a wire rack. Invert it onto wax paper, remove from pan and foil and serve.
