2 cup Buttermilk baking mix
1 cup Milk
1 Egg
1/3 cup Molasses
1/4 cup Packed light brown sugar
1 teaspoon Ginger
3/4 teaspoon Cinnamon
1/4 teaspoon Nutmeg
Ingredients for Peach Sauce:
16 oz Sliced Cling Peaches in heavy syrup
1 tablespoon Cornstarch
1 tablespoon Lemon juice
Method:
Peach Sauce Gingerbread Waffles Recipe
- Mix baking mix, milk, egg, molasses, sugar, ginger, cinnamon and nutmeg in a bowl.
- Pour 1/2 cup of batter in a preheated waffle iron.
- Cook until texture of finished waffle is cake-like. Take care not to over bake.
- Repeat with remaining batter.
- Makes about 6 waffles.
- Strain juice from peaches into a 4-cup glass measure.
- Stir in cornstarch mixed with lemon juice.
- Heat on medium to make the mixture thick.
- Cut peach slices into pieces and add to sauce.
- Serve over waffles.

2 1/4 cups flour
2 teaspoons ground ginger
1 1/4 teaspoons baking soda
1/2 teaspoon salt
1 egg
1 cup dark molasses
1/2 cup milk
1/3 cup melted butter or margarine
Orange Sauce
2/3 cup sugar
2 tablespoons cornstarch
1/2 cup orange juice
1 tablespoon orange zest
2 cups boiling water
1 cup dark molasses
1 tablespoon butter or margarine
1/8 teaspoon salt

2/3 cup sugar
2 tablespoons cornstarch

Method:
- Blend flour, ginger, soda and salt and prepare a dry mixture.
- Beat the egg, milk, melted butter, and molasses and stir well.
- Take a small bowl and beat the egg white. Keep on stirring it till stiff peaks form.
- Mix the egg mixture into the batter.
- Preheat your waffle iron and bake the batter until texture of finished waffle is like a cake. Avoid over baking.
- For orange juice, simply combine sugar and cornstarch in a pan.
- Stir well until you feel the mixture is finely blended.
- Add boiling water to the mixture to make it a little lighter.
- Keep on heating and stirring this mixture until it becomes fine and thick.
- Add butter and salt to the mixture.
- Serve the orange syrup over waffles.
