Matzah Brei
- 4 Matzahs
- 4 Eggs
- 1/2 cup Milk
- Salt (to taste)
- White Pepper (to taste)
- 3 tbsp Butter
Instructions
- Break the Matzah into small pieces. Soak them in water in a large bowl. Remove from water, when they are soft, but not soggy. Drain well.
- Beat the eggs with milk, salt and pepper in a separate bowl. Add matzo and blend together.
- Now, melt butter in a large skillet placed over medium heat. Add the egg mixture. Cook over medium heat.
- When the eggs appear to thicken and become brown in color, use a wide spatula to stir from the bottom, while keeping the matzah in large scrambled pieces.
- You can also cook the egg-matzah mixture as a large omelet, browning it on both sides.
- Serve the matzah brei in a serving dish.
