The Zoroastrian community marks its New Year as Jamshed Navroz on the 21st of March which coincides with the Spring Equinox. One of the three most significant Parsi festivals, Jamshed Navroz is celebrated with immense fun and fervor across all nations where Zoroastrians reside. This festival also commemorates the legendary king of Persia, Jamshed who ascended the throne on this particular day. Hence, the festival calls for double celebrations. Preparations begin days before as people get busy with cleaning their homes and decorating them. On this day, prayers are offered, greetings are exchanged and lavish dishes are prepared. How To Make Akoori
Recipe 1
Ingredients
- 6 large Eggs
- Salt (to taste)
- ¼ cup Low-Fat Milk
- 4 medium Onions (minced)
- 2 tbsp Ghee/ Butter
- 2 cloves Garlic
- ½ inch fresh Ginger
- 4 Green Chilies
- 1 bunch (small) Coriander (minced)
- ½ tsp Cumin Seeds
- 2 small Tomatoes (minced)
- ¼ tsp Turmeric Powder
Procedure
- Break eggs in a large mixing bowl.
- Add salt and low-fat milk. Whisk lightly.
- Combine ginger and garlic together in a food processor and grind to a paste.
- Heat ghee in a frying pan.
- Add onions and free until golden.
- Add ginger-garlic paste and stir fry for a few minutes.
- Add tomatoes, cumin seeds, green chilies, coriander and turmeric powder. Mix well and cook for 5 minutes.
- Remove the mixture from heat and set aside to cool.
- Add the egg mix to the spice mix and cook on medium heat till the mixture resembles scrambled eggs.
- Serve hot with rotis or puris.

- 4 Eggs
- ¼ tsp Turmeric Powder
- ½ tsp Pepper Powder
- ½ tsp Garam Masala Powder
- 1 Onion (finely chopped)
- 1 Tomato (chopped)
- 1 tsp Ginger (minced)
- 2 tbsp Coriander Leaves (chopped)
- 2 Green Chilies (chopped)
- Salt (to taste)
- 2 tbsp Oil
Procedure
- Heat oil in a frying pan.
- Add onion and ginger. Sauté till the onion turn translucent.
- Add tomato and stir fry for a minute or so.
- Break eggs in a large mixing bowl.
- Add in turmeric powder, garam masala powder, coriander leaves, green chilies, pepper powder and salt. Mix well.
- Add the egg mix to the pan and stir fry till the eggs are cooked thoroughly.
- Serve hot with bread or chapattis.
