One such sweet is the pinnie. The name 'pinnie' has been derived from its fist shape with the finger markings that can be seen after preparing it. A common sweet delicacy at Lohri, pinnie is also called 'pindi' by some people. It is prepared from wheat flour and ghee and can be included with dry fruits as well. Pinnie
- 250 g Wheat Flour
- 250 g Ghee
- 250 g Sugar ground
- 3-4 tbsp Milk
- 1 tsp Cardamom Powder
Method
- Place a heavy pan on low flame and melt ghee.
- Add wheat flour and cook on medium flame stirring continuously.
- When the flour turns medium brown and aroma exudes, remove from the stove.
- Spread the flour in a large plate and cool under shade at slightly above the room temperature.
- Sprinkle cardamom powder and sugar over the cooled flour and mix well.
- Now, sprinkle milk and mix again.
- Form some mixture and press in the fist to form tight shaped balls called pinnies.
- You can add chopped nuts like almonds, walnuts, raisins, pistachios, etc.
- You can also make urad pinnies, using urad dal flour instead of wheat flour.
- For an enhanced flavor, add 100 g khoya to the flour.
