Losar is celebrated from the first to the third day of the first month of the Tibetan lunar calendar. Rice And Potato Stew
- 4 ounces (1 stick) Butter
- ½ cup Onions (sliced)
- ½ tbsp Paprika
- ¼ tsp Coriander (ground)
- 1 tsp Salt
- 1 tsp Sugar
- ½ tsp Garlic (chopped)
- ¼ cup Rice
- 1 cup Maine/New Potatoes (diced)
- 1 quart Water
- 2 tbsp Cilantro (chopped)
Instructions
- Melt butter in a large heavy saucepan.
- Add onions and sauté till they turn light brown.
- Add paprika, coriander, salt, sugar, garlic, rice, potatoes and water. Mix well.
- Boil the mixture and simmer for about 30 minutes till the potatoes and rice are done.
- Remove from heat and sprinkle cilantro.
- Serve hot.
