Kachumber Salad

Gahambars are seasonal festivals that are celebrated six times in a year commemorating the six different elements that are responsible for the creation of the world. Each of the elements is associated with each Gahambar. This tradition is followed by the people of the Zoroastrian community residing worldwide. The dates of the Gahambars are decided according to the lunar calendar followed by them. Each Gahambar is observed for five days and is marked with immense zeal and gusto. People participate in religious ceremonies, wherein they pray and praise the ancestors. The festival is also marked by numerous different traditional gourmets. How To Make Kachumber Salad

Recipe 1

Ingredients
  • 1 large Cucumber (cut in half, de-seed and sliced in ¼" pieces)
  • 1 medium Tomato (de-seeded and cubed)
  • 1 White/ Red Onion (sliced)
  • ½ cup White/ Red Wine Vinegar
  • 1 tbsp fresh Lemon Juice
  • ¼ tsp Cumin Powder
  • Salt (to taste)
  • Pepper (to taste)
  • Cayenne Pepper/ Sriracha (to taste)
Instructions
  • Soak the sliced onion in vinegar and refrigerate it for one hour.
  • Combine cucumber, tomato, lemon juice, cumin powder, salt, pepper and cayenne pepper together in a large mixing bowl.
  • Add the marinated onion along with the vinegar.
  • Toss the ingredients to mix well.
  • Serve the salad either immediately or refrigerate for sometime to allow the salad to soak in its own juices.
Recipe 2

Ingredients
  • 6 Tomatoes
  • 1 Red Onion (finely chopped)
  • ½ Cucumber (de-seeded and finely chopped)
  • 1 Red Chili Pepper (de-seeded and finely chopped)
  • Handful of fresh Coriander (finely chopped)
  • ½ tsp Cumin Seeds
  • Juice of 1 Lime
  • Salt (to taste)
  • Pepper (to taste)
Instructions
  • Take a large bowl and mix red onion with half of the lime juice.
  • Halve the tomatoes and remove their seeds and core.
  • Chop the tomatoes finely and add to the bowl.
  • Add coriander, cucumber and red chili pepper.
  • Dry roast the cumin seeds in a pan till they are fragrant.
  • Remove and grind the cumin seeds to a fine powder in a mortar and pestle.
  • Add the ground powder to the salad.
  • Add salt, pepper and remaining half lime juice.
  • Toss the salad well and serve chilled.
Recipe 3

Ingredients
  • ¼ small Cucumber (seeds removed and chopped into 3 mm dices)
  • ½ Carrot (cut into 3 mm dices)
  • 1 Tomato (seeds removed, cut into 3 mm dices)
  • ½ tsp Salt
  • 1 tsp Caster Sugar
  • 1 Lemon (juice only)
  • 2 tbsp Extra-Virgin Olive Oil
  • 1 tbsp fresh Coriander (finely chopped)
  • Salt (to taste)
  • Black Pepper (freshly ground, to taste)
Instructions
  • Combine cucumber, carrot and tomato in a medium mixing bowl.
  • Take another small bowl and mix together salt, caster sugar, lemon juice, olive oil and coriander.
  • Pour this dressing over the vegetables and toss well to combine.
  • Add salt and black pepper to taste. Mix.
